Baked Chicken, Zucchini and Cheese Balls

These are such a handy thing to have on hand, as a snack, breakfast or even lunch with a side salad


Serves 10

Ingredients:

  • 2 Zucchini Medium Sized

  • 500g  Chicken Mince

  • 1 Red Onion Finely Chopped

  • 1 Garlic Clove, Minced

  • 150g  Mozzarella Cheese Grated

  • 100g  Cow Feta

  • 1 Free-Range Eggs

  • 1 Lemon Rind, Grated

  • 3 tbsp  Coconut Flour

  • Salt and Pepper (to taste)

  • 2 tbsp  Parsley (Optional) Finely Chopped

Instructions:

  1. Preheat your oven to 220°C (fan-forced) and lightly grease a non-stick baking tray.

  2. Grate the zucchini and place in a colander. Squeeze out all the water from the grated zucchini and place in a bowl.

  3. Add chicken mince, onion, garlic, mozzarella, feta, egg, lemon zest and salt and pepper. Mix well.

  4. Fold in the coconut flour.

  5. Roll the mixture into small balls and chill for at least 30 minutes in the fridge. If you find the mixture is still a little ‘wet’ you can add some more coconut flour to help it ‘stick’ together and shape into balls.

  6. Place the chicken balls onto your prepared baking tray and cook for 16-18 minutes or until they begin to turn golden and are cooked through when tested.

  7. Serve with green salad and 1 tablespoon mayo.
