I love making a cafe styled breakfast on the weekends - give this a go, you won't regret it.
Broccoli Hash - Serves 2
Ingredients:
250g Broccoli
1 tbsp Parmesan Cheese
1/3 cup Cashews
1 Garlic Minced
1 Lemon Juiced
½ tsp Chilli Flakes
2 Free-Range Eggs
Instructions:
Combine all ingredients (except eggs) in a food processor and blend until crumbly
Whisk the eggs in a separate bowl and add to the broccoli mixture
Heat a pan over a medium heat and spoon the mixture into the hot pan. Cook until golden and cooked through
Serve with side salad and poached eggs
