Broccoli Hash

I love making a cafe styled breakfast on the weekends - give this a go, you won't regret it.


Broccoli Hash - Serves 2


Ingredients:

  • 250g  Broccoli

  • 1 tbsp  Parmesan Cheese

  • 1/3 cup  Cashews

  • 1 Garlic Minced

  • 1 Lemon Juiced

  • ½ tsp  Chilli Flakes

  • 2 Free-Range Eggs

Instructions:

  1. Combine all ingredients (except eggs) in a food processor and blend until crumbly

  2. Whisk the eggs in a separate bowl and add to the broccoli mixture

  3. Heat a pan over a medium heat and spoon the mixture into the hot pan. Cook until golden and cooked through

  4. Serve with side salad and poached eggs
