Lemon and Coconut Truffles

Lemon and Coconut Truffles I made this weekend. So delicious. I love these because they have no dried fruit so lower in sugar than your normal 'bliss balls'


Raw Lemon and Coconut Truffles - Makes about 12 bliss balls


Ingredients:

  • 1 ¼ cup desiccated coconut

  • 1 cup almond meal

  • 4 tbsp. extra virgin coconut oil

  • 2 tbsp. raw honey

  • ½ cup sliced almonds

  • zest of one lemon

  • Juice of one lemon

  • 1 tsp vanilla extract

Instructions:

  1. In a food processor, add all ingredients. Blend for 1-2 minutes, or until the mixture starts to mix together like dough.

  2. Use your hands to form small balls and coat in coconut.

  3. Place in the fridge for at least half an hour to set.

  4. The truffles can be kept at room temperature, but I find they are best kept in the fridge. Make around 25 truffles.
